For years, I avoided salads because they always seemed boring, predictable, and unlikely to leave me satisfied. Then I tried a simple bowl of cucumbers, tomatoes, and onions—and everything changed.
The appeal comes from balance. Crisp cucumbers provide a refreshing crunch, juicy tomatoes add sweetness and softness, and thinly sliced onions bring a sharper flavour. A light dressing made with vinegar or lemon juice and olive oil ties everything together without overpowering the vegetables.
Allowing the salad to rest for 10 to 15 minutes makes an important difference. The salt draws out some of the vegetables’ natural juices, which mix with the dressing and create even more flavour. During that time, the onions soften slightly and the cucumbers begin absorbing the tangy mixture.
To prepare it, combine three sliced cucumbers, three chopped tomatoes, and one thinly sliced small onion. Add three tablespoons of vinegar or lemon juice, two tablespoons of olive oil, and salt and black pepper to taste. A small pinch of sugar can be added to balance the acidity.
This salad is quick, affordable, and easy to customise with herbs, peppers, or feta. It proves that fresh ingredients do not need complicated preparation to create something genuinely satisfying.
