The truth is that each stage of ripeness offers slightly different nutritional benefits, so the “best” banana depends on your personal preferences and dietary goals.

Green bananas are the least ripe and contain more resistant starch, a type of carbohydrate that acts like dietary fiber. Resistant starch may help you feel full for longer and can support gut health by feeding beneficial bacteria. Because green bananas contain less sugar, they also tend to have a lower effect on blood sugar levels than fully ripe bananas. However, they’re firmer and can be harder to digest for some people.
