Heat releases sulfur compounds from the egg white, which react with iron in the yolk and produce a thin layer of iron sulfide. The result is the familiar green or gray border.<\/p>\n<p>Although completely harmless, the ring often accompanies a dry, chalky yolk and rubbery egg white. Then transfer them immediately to a bowl of ice water for at least five minutes. This stops the cooking process and helps preserve tender whites and bright yellow yolks.<\/p>\n<p>The green ring is simply a sign of excessive heat, not contamination.
